Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 cup Panko
- 1 tbs smoked paprika
- 1 tbs chili powder
- 2 large eggs beaten
- 1/2 cup flour
- 1 box frozen mini waffles
- Sriracha
- Syrup
- Vegetable oil
- Toothpicks
Directions:
- Cut the chicken into 1-inch chunks. Error on the smaller side.
- These can be baked or pan-fried.
- Baked
- Pan-fried
- Add enough oil to a large skillet to cover 1/3 of the chicken thickness
- Working in batches, dredge the chicken in the flour, dip into the eggs, then dredge in Panko, pressing to coat
- Cooking:
- Baked
- Add all the chicken to a greased cookie sheet and bake for 20 minutes.
- Pan-fried
- Working in batches, cook for 3-5 minutes, flipping once 1/2 way through.
- Transfer to a paper towel lined plate
- Waffles
- Cook in oven, following the directions.
- Serving:
- To make each bit, cut the waffles in 1/2.
- Place a chicken bite on the waffle
- Add a few drops of sriracha
- Pour a little syrup over the bite
- Secure with a toothpick
