For most of us, when we think of BBQ, we think of the sauce dripping off our fingers as we eat some slow cooked tender meat. In Memphis, it is a little different. A dry rub is used to season the meat and while cooking, no sauce is added. If you have any sauce with your meat, it is because you add it as you are eating it. Once you have enjoyed a good dry rub on your favorite meat, you may not even care for the sauce on the side. There is something about the flavor of the meat that comes through without the sauce, especially if you smoke the meat!
Here is one of our favorite dry rubs. It is actually a fairly sweet rub, but has just a hint of a bite at the very end. We used this last week with boneless pork ribs and none of us could get enough. Even the kids used only a very small amount of sauce with the ribs.
