Which is better, Popeye's or Chick-fil-A?
Well, I have not had the Popeye's sandwich, but I have made my own version which beats them all!
Adding cornstarch to the flour coating gives the sandwich a light, crispy, crunchy coating that is better than any other chicken sandwich.
The quick fry keeps the chicken juicy while the cajun spices give the chicken a little kick.
Ingredients:
2 chicken breast or thigh
2 eggs
Butter milk, about 1/2 cup
Cajun seasoning (like Slap Yo Mama)
Flour
Cornstarch
Cayenne
Paprika
Pepper
Salt
Mayo
Hamburger buns
Spicy pickle slices
Oil for frying
Directions:
Crack the 2 eggs in a bowl, add about 1/2 cup of buttermilk, some cajun seasoning (1-2 tbs ish) and whisk.
Pound the chicken to 1/2 in in thickness then cut into 2-3 sandwich size pieces. Add to buttermilk mixture. Add a little buttermilk if needed to cover, then refrigerate for 2-4 hours.
For the Mayo mixture, combine mayo, cajun seasoning & cayenne. This can sit in the fridge till you are ready to use.
For the flour mixture, combine flour, cornstarch (1/2 as much as the flour), cajun seasoning, cayenne, paprika, & pepper. Add plenty of cajun seasoning and pepper. You want to see and smell it.
When ready to fry, take the chicken pieces and dip into flour, coating well, then set on a pan. Fry at 350 for 7-10 min. When done, place on a wire rack.
Toast the buns then spread mayo on both sides, add the pickles on bottom, then the fried chicken.
Notes:
Servings = 3-4 (5-6 sandwiches)
This recipe does not have many exact measurements. Add as you see fit, but don't be afraid to add a lot of seasoning. That is where the flavor comes from. If you can't smell the spices in the flour mixture, you don't have enough.
