You may not know the southern favorite of pimento cheese, but you should. Pimento cheese is a great chip dip, burger topping, grilled cheese or even stuffed into a chicken breast.
The perfect balance of creamy and spicy, pimento cheese needs to be on your table.
One of the best commercial versions is the Pawleys Island Palmetto Pimento Cheese. This recipe is as good or better.
Ingredients:
2-2.25 Cups Sharp Cheddar Cheese (8-10 oz block, grated)
4 Ounces Cream Cheese, softened to room temp
0.5 Cups Parmesan
0.5 Teaspoons Onion, grated
0.25 Cups, 2 Tablespoons Mayo
4 Ounces Pimento, drained then dice the diced pimento's
0.5 Teaspoons Cayenne
Directions:
In a stand mixer, mix all but the pimentos for 1-2 min. Add the pimentos and stir in.
Changes to try - Increase cream cheese to 6 oz & mayo to 1/2 cup. Blend more for a creamier consistency then add the pimento's.

8oz block sharp cheddar cheese, grated
6 oz cream cheese
1/4 cup plus 2 tbs Dukes Mayo (6 tbs total)
.5 cups parmesan
2 tbs sour cream
1 tbs finely chopped green onions (the green part only)
1 tsp honey
.5 tsp onion, grated
.5 tsp cayenne
4 oz jar pimento's, drained then diced
