This is a great dip that brings out the fantastic sweetness of slow cooked caramelized onions with the slightly spiciness of the chorizo.
This is an easy dip to make ahead. It can also be kicked up with a little spice like Dave's Insanity sauce, but what doesn't need that?
Ingredients:
4 cups onion, chopped
kosher salt
1/2 cup chopped chives or green onions
2/3 cup mozzarella cheese
1/2 cup mayonnaise
16 ounce package of cream cheese, softened ahead of time.
1 pkg chorizo sausage, about 12 ounces
1/4 teaspoon thyme
6 tablespoons butter
Directions:
In a skillet, melt butter over medium heat and add onion, thyme & season with kosher salt over lower heat to medium-low and cook onion for about 40 minutes until onions become soft and caramelized.
In another pan, remove the chorizo from it's casing and cook in a medium skillet over medium high heat for about 10 minutes. Chop and stir often to break up the chorizo and cook evenly. Set aside when done.
In a medium sized bowl add cream cheese and mayonnaise and mix well until smooth. Add mozzarella cheese, caramelized onions, green onions and mix well. Gently fold in chorizo. Pour into a 9x13 baking dish.
Place on a baking sheet and bake at 350 degree F for 12-15 minutes or until dip is golden and bubbly. Garnish with additional green onion and serve with baguette slices or tortilla chips.
Notes:
If you make this ahead, allow it to sit out for a bit to get to room temperature. It may need to cook for 15-20 minutes.
