As winter starts approaching and you get cold evenings, you start looking for one of those warm comfort foods to make.
Enter Beef Stroganoff. It's all about the tender beef & rich mushroom flavor pulled together with a great sauce and soft, creamy egg noodles.
Dijon mustard, Worcestershire and sour cream round off the flavors in this comfort food favorite.

Ingredients:
1 (12-oz.) package egg noodles
1 tbs vegetable oil
1 lb sirloin steak, cut into thin strips about 2 in long
Kosher salt
Freshly ground black pepper
2 tbs extra-virgin olive oil, divided
1 lb baby Bella mushrooms, thinly sliced
1/2 large onion, chopped
2 cloves garlic, minced
2 tsp fresh thyme leaves (or 1.5 tsp dried)
1 tbs tomato paste
3 cups beef broth
2 tsp Dijon mustard
1 tsp Worcestershire sauce
2 tbs cornstarch
2 tbs butter
2 tbs sour cream, plus more for serving
2 tbs freshly chopped parsley
Directions:
Start water boiling for the egg noodles.
In a large skillet over medium-high heat, heat vegetable oil. Add beef and sear 1 minute to get slightly browned but still pink in the middle, season with salt and pepper. Work in batches if needed. Remove beef and place in a large bowl.
Lower heat to medium and add one tablespoon olive oil. Add mushrooms and cook until golden and tender, 6-8 minutes. Season with salt & pepper. Remove from skillet and place in bowl with beef.
While the mushrooms are cooking, heat the broth then in a small bowl, whisk some of the hot broth with the cornstarch.
Add remaining olive oil and add onion. Cook until tender, 5-6 minutes. Add garlic, thyme, and tomato paste and cook until fragrant, 2 minutes more.
Stir in the beef broth, mustard, and Worcestershire sauce and bring to a simmer for 10-12 minutes.
While simmering, prepare egg noodles according to package instructions. When done, remove from heat, drain and add the butter and a bit of olive oil to the noodles.
Remove the broth from the heat and add the beef & mushrooms mixture. Stir in sour cream. Season with salt and pepper.
Spoon beef mixture over prepared egg noodles and garnish with a dollop of sour cream and parsley.
