Maw-maw's Mac & Cheese is the perfect comfort food. It has been a family favorite for as long as I can remember. The Velveeta cheese creates a hearty, creamy compliment to the pasta while the panko breadcrumbs on top add a nice texture crunch. I guarantee, people will make sure they have a little crunch in each bit.
This heartwarming side dish goes with grilled chicken, pulled pork, ribs or most anything on the grill but is also the perfect potluck dish when you want a crowd pleaser.
Ingredients:
1lb box of rigatoni
16oz - velveeta cheese (that is 1/2 of the large block)
1 12oz can evaporated milk
1/2 stick butter
salt & pepper
1/2 to 3/4 cup panko bread crumbs
Directions:
Prepare the rigatoni according to the directions, but cook a little less.
Preheat oven to 350°.
Drain and return to the cooking pot.
Add the Velveeta cut into little pieces then stir in the can of evaporated milk & butter.
Stir to combine until the cheese is almost fully melted.
Add salt and pepper to taste.
Once the cheese and butter is melted and everything combined well, transfer to a 9x13 baking dish that is sprayed with cooking spray.
Sprinkle panko crumbs on top, covering completely.
Place in preheated oven and cook until the panko crumbs are lightly browned, 15-20 minutes and bubbly on the sides.
Place under the broiler at for 2-3 min to crisp the topping.
Notes:
Prep Time = 15 min
Cook Time = 15-25 minutes
Servings = 4-6
For an added crunch, put under the broiler for 2-5 minutes at the end. Watch closely.
