Pasta Aglio e Olio is a very simple dish normally made with spaghetti, but here I have used linguine to give a little more noodle to hold the sauce.
Crispy slivers of garlic combined with a little fresh Parmesan and pasta water create a creamy sauce that coats the pasta and a little splash of lemon at the end, adds a bright freshness. You will not believe how much flavor comes from these simple ingredients.

Ingredients:
5 large garlic cloves, thinly sliced
1/2 cup parsley, chopped
6 tbs olive oil (a little less than 1/2 cup)
1 tsp red pepper flakes
1/2 lb dried linguine
1/2 lemon
1 cup Parmesan, freshly grated
Salt
Fresh grated pepper
Directions:
Heavily salt a large pot of water, and bring to a boil. Cook pasta until slightly underdone while completing the steps below.
Slice the garlic cloves thinly, and set aside. Add the oil to a saute pan and heat till just simmering. Once the pasta is about 1/2 way done, add the garlic. Stir constantly, until softened and just turning golden on the edges, about 3-4 minutes. Don't let the garlic turn brown.
Add the red pepper flakes and lower the heat to medium-low. If the pasta is not ready, remove from heat until ready.
Add the pasta and 1/4 cup reserved pasta cooking water. Stir vigorously for about 2 minutes to create the sauce, slowly sprinkle the parmesan as you are stirring. Stir in the parsley the squeeze the lemon juice over top.
Remove from heat and add fresh pepper and a little salt if needed.
