Good caramelized onions can take an hour or more to make if you are looking for the rich, sugary sweet flavor. Sometimes, you don't have that much time. Here is a quick way to get great caramelized onions in about 15 minutes.
Ingredients:
- 2 tablespoons vegetable oil
- 2 large red onions , peeled and cut into 1/2-inch rounds, rings separated
- 3 cloves garlic , minced
- 1/2 cup balsamic vinegar plus 1 additional tablespoon
- 1 teaspoon minced fresh rosemary
- 1 tablespoon light brown sugar
Directions:
- Heat 2 tablespoons oil in large skillet over medium heat until shimmering. Add onions and 1/2 teaspoon salt and cook, stirring frequently, until lightly browned, about 10 minutes.
- Over medium heat. Add garlic and cook until fragrant, about 30 seconds. Add 1/2 cup vinegar, rosemary, and brown sugar and cook, scraping up browned bits with wooden spoon, until thick and syrupy, about 2 minutes. Pour remaining 1 tablespoon vinegar. Season with salt and pepper.
