Growing up, Grandma Motta's ravioli's were one of the most looked forward to meals of the year. Large, thick ravioli with a meat filling.
Most Christmas celebrations, we ate so many we couldn't move.
Over time, we have made the ravioli smaller and probably eat less, but the simple filling still is what I remember.
Ingredients:
1/2- 3/4 lb - Ground Chuck
1 package frozen, chopped spinach
2 eggs
1/2 cup Parmesan cheese, freshly grated
1.5 cup Ricotta
1 tsp Garlic powder
1/2 tsp Pepper
1/2 tsp Salt
Fresh parsley
Directions:
Brown the ground beef, drain the greese then break up into very small pieces. Set aside to cool.
Thaw the spinach and squeeze dry.
Mix all the ingredients well.
Add to ravioli
