Are you looking for a simple pepper sauce to make at the end of the season when you have more peppers than you know what to do with? This is a simple cayenne pepper sauce that falls somewhere between a Tabasco sauce and a Frank's Red Hot sauce.
Ingredients:
- 18-24 red cayenne peppers
- 2 cups white vinegar
- 6 gloves garlic, halved
- 1/2 tsp kosher or sea salt
Directions:
- Remove the stems and caps from the peppers. Cut them in thirds.
- Place in a stainless steel saucepan and add the vinegar, salt and garlic. Add a little extra vinegar to cover peppers if needed.
- Bring to a boil, then reduce heat and simmer until the peppers are soft, about 30 minutes.
- Place the mixture in a blender or food processor and blend until it is pureed.
- Pour into a canning jar and put in the refrigerator for 1-2 weeks.
- After the 2 weeks, pass the mixture through a fine mesh strainer.
- Put sauce on everything you eat and enjoy!
