If you have never been to Louisiana, you have probably never tired Boudin. If you have been there, you have hopefully tried this great little appetizer! Either way, this is a great appetizer that you need to try. Outside of Louisiana, you will probably have a hard time finding Boudin, but thankfully, this is a simple appetizer that you can make. With a little bit of pork, rice and liver, you can have a great tasting bite of of Louisiana. If the "L" word just scared you off (liver), please give it a try.
Ingredients:
3 cups chicken stock (enough to cover meat)
1 1/2 lbs. of pork roast, shoulder or butt (boneless)
1/2 lb liver, diced
1/2 cup white onions, diced
1/4 cup bell pepper, diced
1/4 cup celery, diced
3 cloves garlic, diced
3 green onion white part, diced
2 tsp salt
2-3 tbs Cajun Seasoning
1 tsp red pepper
1 1/2 cups of cooked white rice
1/2 cup parsley
½ cup green onions, green part only
Directions:
Lightly coat the pork with cajun seasoning. In a hot skillet, sear the pork on all sides, about 2 min a side. Add to slow cooker.
In the same skillet, sauté the onions, bell pepper & celery, add a little salt to let the moisture release.. Cook till soft. Add the garlic and the green onion whites. Cook a minute or 2 then add the liver and cook for another 2 minutes, add to the slow cooker.
Add the cajun seasoning and red pepper then add enough chicken stock to cover meat. Cook on low for 3-4 hours till the pork is falling off the bone.
When done, separate the meat and veggies from the liquid, reserving 1 cup.
In a large bowl, add the meat & veggies, parsley, green onions & rice. Add about 1 cup of liquid till the mixture is moist. Mix to combine then run through the meat grinder.
Stuff into casings.
Brush the sausages with olive oile then smoke for 1 hour at 225.
Notes:
The boudin is already cooked so you can server it a few different ways:
Microwave and remove the casing and eat.
Grilled (my favorite way to eat)
Sauté in a small pan with water or olive oil.
For breakfast microwave, remove from casings and serve with eggs.
