Simple, fresh shrimp taco's. The chipotle gives this a little kick, but still lets the freshness of all the ingredients come through. Serve with Tomatillo Salsa Verde and a little bit of shredded cabbage.
Ingredients:
- Tomatillo Salsa Verde
- 1 tbs olive oil
- 1 large chipotle in adobo, finely chopped
- 1 tsp kosher salt
- 1 lb medium shrimp, peeled
- 8 corn tortillas
- 1 avocado, sliced
- cabbage, shredded
- cilantro
- 1 lime
Directions:
- Ahead of time, make the Tomatillo Salsa Verde.
- In a medium bowl, combine the olive oil, chipotle and salt. Add the shrimp and toss to coat. Allow to marinate for 10 minutes.
- Heat a large pan (or grill pan if you are cooking something else outside) to medium-high.
- While the pan is heating up, heat your tortillas over a burner or on the grill for 20 seconds per side.
- Add the shrimp mixture to you pan and cook or grill the shrimp until they are translucent, about 2-3 minutes.
- To server, in each tortilla put 3-4 shrimp then layer with avocado, tomatillo salsa, lime, cabbage & cilantro.
Serving 2 taco's per person, this will feed 4 people.
