Chex mix is one of those throw back snacks. I always remember that my grandma had it sitting out to snack on anytime we visited.
How can you improve on such a classic you may ask, add a little smoke to it. Keeping a simple fruit wood smoke keeps it from having an over-smoked aroma but let's you know it was on the smoker.
A little Creole seasoning is the perfect compliment to the smoke and saltiness of the snack.
Try this the next time you break out your smoker, or just break out your smoker for this!
Ingredients:
2 cups Rice Chex
2 cups Wheat Chex
2 cups Corn Chex
2 cups Cheerios
2 cups mini Pretzels
1 cup Cashews
1 cup butter
2 tbs worcestershire sauce
1 tbs Tony Chachere's Creole Seasoning
Cherry, Apple or other sweet fruit chips
Directions:
Preheat smoker to 225
Add all the snack mix into a large bowl
In a small sauce pan, melt the butter. Once melted add the worcestershire & creole seasoning.
Slowing mix the sauce into the snack mix.
Spread evenly on a smoker rack covered with foil. Keep a single layer to get the best smoke coverage.
Put trays in your smoker and add your wood chips.
Cook for 1 hour, stirring half way through.
Notes:
Using hickory or mesquite adds a very heavy smoke flavor. Mix a little in if you like a little smokier flavor.
