Beef, onions, cheese... what more do you want?
Ingredients:
- 1.5 lbs ground beef
- Kosher salt and fresh ground pepper
- 5-6 tsp olive oil
- 2 yellow onions, thinly sliced
- 12 slices rye bread
- 12 slices cheddar cheese (or whatever you like)
- 8 tbs butter, softened
Directions:
- Divide the beef into six tennis ball sized sections and flatten to 1/4in thick patties. The edges do not have to be perfect like a typical burger. The patties should also be slightly bigger than the bread it will be going on.
- Heat 2 tbs oil in a large skillet or grill pan. Add the onions and season with salt and pepper. Cook, stirring occasionally, until softened and they have browned edges, about 10 minutes. Transfer to a bowl.
- Working in batches, add a little more oil and brown the patties. After 2 minutes, flip the patties and cook an additional 2 minutes. The patties should be done in 4 minutes total. Transfer the patties to a plate. Repeat until all the patties are cooked.
- Spread 1/2 the bread out and top with onions, a cheese slice, and a patty. Top each burger with another slice of cheese and a piece of bread. Spread softened butter over the top and bottom of each sandwich.
- In the skillet or grill pan used earlier, working in batches if needed, cook the burgers 3 minutes on each side or until golden brown.
Notes:
- Pair this with a light, crisp IPA and double fried french fries.
