Garlic shrimp seems as simple as throwing some garlic in a saute pan with some shrimp, but this often tends to produce a harsh garlic flavor and over done shrimp. The following recipe brings the sweet side of the garlic out and is perfectly balanced with the shrimp.
Ingredients:
- 1 lb uncooked shrimp, tails removed
- 13 cloves garlic, crushed
- 8 tbs olive oil
- 1 tsp salt
- 1 bay leaf
- 1 mexican dried chili pepper
- 1 1/2 tsp sherry vinegar
- 1 tbs parsley, chopped
- 1/2 tsp paprika
Directions:
- Garlic Oil
- Peal and crush 4 gloves of garlic with the side of you knife. Place in a 12in skillet and add 6 tbs of olive oil.
- Turn heat on medium-low for 7 minutes.
- Take off heat and let cool.
- Shrimp Marinade
- Put shrimp in a bowl. Add 2 tbs olive oil, 1 tsp salt and 1 clove of garlic, pressed.
- Mix and let sit for 30 minutes.
- Cooking
- Thinly slice 8 cloves of garlic and add to skillet with the cooled garlic oil. Add the bay leaf then tear the chili pepper into 6-8 pieces and add to pan. Feel free to allow most of the seeds to fall into the skillet as well.
- Turn the heat on low for 5-7 minutes until the garlic slices are soft.
- Add the shrimp in a single layer and turn the heat up to medium-low for 2 minutes.
- Flip the shrimp and cook for an additional 2 minutes.
- Turn the heat up to medium, add the sherry vinegar, parsley and paprika, cook for 1 minute stirring occasionally.
- Plate and enjoy!
Notes:
- For an added flair, heat a cast iron skillet over high heat about 10 minutes before cooking the shrimp. Plate the shrimp to the cast iron skillet and the dish will become "Sizzling, Garlic Shrimp".
