The 60 Minute Sunday is a clone of the Dogfish Head, 60 Minute IPA. It became the 60 Minute Sunday because I brewed it on a Sunday afternoon. The hops from the average clone recipe were not available at my LBHS so I created this with close equivalents that were readily available. It turned out pretty stellar! This is a great IPA that has a great balance between the citrus hop aroma and the hoppy bitterness. The hop schedule is listed below, but what gives this beer such a great balance is that the hops are added continuously throughout the boil. To do this, I took 12 Dixie cups and labeled them in 5 minute increments from 5 to 60. I then divided the hops into the cups based on when they are to start and when the next hop begins. For example, when it says to add the Warrior hops at the beginning of the boil, I divided the .75oz of hops into the cups labeled 60, 55, 50, 45 & 40. I continued this through all the hop additions so that every 5 minutes during the boil, I would grab the next cup and through it in.
