They say that the sauce makes the dish. In this case, it's completely true. The sweetness from the brown sugar pairs perfectly with a light wheated bourbon. The sauce has a ton of flavor but does not overpower the fish or anything else on the plate.
Cook the fish till it is light and flakey then drizzle the sauce over everything on your plate. Serve with roasted veggies or pearl couscous for a fantastic meal.
Ingredients:
1 lb salmon (6-8 oz per person)
1/4 cup dark brown sugar, packed
1/4 cup maple syrup
3-4 tbs bourbon (light in flavor like a wheated bourbon)
2 tbs olive oil
Green onions for garnish
Directions:
Place salmon ziplock bag. Combine brown sugar, maple syrup and bourbon then pour over salmon. Let stand 15 minutes.
Drain the sauce to a small sauce pan and reduce in 1/2 while the fish is cooking.
Add the olive oil to a large saute pan on med-high heat. Add salt & pepper to the skin side of the fish. When the pan is hot, carefully lay the fish in, cook for 5-6 minutes. While it is cooking, add salt & pepper to the top side then flip and cook for a 2-3 min till the temp is 110-115.
Plate and drizzle the sauce over everything. Garnish with green onion.
