Maybe we shouldn't call this a burger, but whatever you call it, the flavors fit together so well you will want to make it again.
The chicken gets the smash burger treatment which creates a little caramelization. Then top with peppers, onions, cheese & crispy onions for a little texture. These flavors fit together better than you can imagine.
Don't just think burgers, see the notes at the bottom to make these into sliders.
Ingredients:
1 lb ground chicken (or grind your own using chicken thighs)
1 Serrano pepper, diced small
1 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
1/2 red pepper, sliced into thin strips
1/2 onion, sliced into thin strips
3 slices Monterey Jack Cheese
Mayo
Brioche Buns (make a 1/2 batch of our recipe)
Directions:
Combine the ground chicken, serrano, garlic powder, salt and pepper.
Form into 6 - 2.5oz balls then flatten to about 3/8 in thick
In a medium pan on medium/high heat, add a little neutral oil and the peppers and onions. Sauté for 10 minutes until softened. Season with salt & pepper.
In a large non-stick pan or griddle, over medium high heat, lightly oil then add the chicken. Cook for 3 min. Flip, then add a slice of cheese to the top of 3 of the patties. Cook for another 3 minutes. When done, add a patty without cheese on top of one with cheese.
While the chicken is cooking, lightly toast the buns.
To assemble, add mayo to the top and bottom buns. To the bottom bun, add the 2 chicken patties, pepper & onion mixture, onion straws, then the top bun.
Notes:

Chicken Thighs - If you have a grinder, use 1 lb chicken thighs instead and run them through the grinder. Way more flavor in thighs that in the store bought ground chicken.
Slider Version:
For 2 pan of sliders:
1.5 lb ground chicken (grind your own using chicken thighs is so much better than store bought)
2 Serrano pepper, diced small
2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
2 red pepper, sliced into thin strips
2 onion, sliced into thin strips
12 slices Monterey Jack Cheese
Mayo
2 pgk Hawaiian Rolls
3 cloves garlic, minced
3 tbs butter
Mix chicken, serrano, garlic powder, salt & pepper. Spread out on a sheet pan to a little bigger than the size of the slider buns. Bake for 10 minutes at 350
In a large pan on medium/high heat, add a little neutral oil and the peppers and onions. Sauté for 10 minutes until softened. Season with salt & pepper.
Heat the butter and garlic, then set aside (microwave in 10 second intervals, stir, then continue till butter is mostly melted).
Cut slider buns in half, keeping individual buns together. Add mayo to top and bottom. To the bottom bun, add the chicken slab, layer with cheese, peppers & onions, crispy onion straws then top with the top bun.
Brush the garlic button on top bun.
Cover with foil and put back in oven for 10 min to melt the cheese. Remove foil and cook another 5 min to crisp the top bun a bit.
