This is a light/fresh salsa that is quick to make and super tasty.
Ingredients:
- 1 lb tomatillos
- 1/4 cup chopped red onion
- 4 cloves garlic, peeled
- 2 jalepeno's seeded
- 1/2 cup cilantro
- 1 tbs lime juice
- salt to taste
Directions:
- Preheat the oven to 350
- Slice the tomatillos and jalapeno's in half and lay on a lightly oiled baking sheet.
- Roast in the oven for 7-10 minutes until the tomatillos are lightly browned and softened.
- Transfer the roasted ingredients as well as the remaining ingredients to a blender and blend till the ingredients are finely chopped. Do not go too long.
- Transfer to a serving bowl and eat warm or chill to use later.
