BBQ sauce is the reason that ketchup was created. BBQ sauce is simple to make, but takes just a bit of time. But... it is so worth it. This BBQ sauce lives up to the title. Bacon & chipotle is perfectly combined to create a smokey BBQ sauce.
To make the most of this sauce, pair it with bacon burgers with bacon on top, then spoon some of the Chipotle Bacon BBQ Sauce on top. It's a bacon palooza!
Serving Size:
- 2.5 cups (3/4's of a canning jar)
Ingredients:
- 5 slices of bacon
- 1/3 cup onions, minced
- 3 cloves garlic, minced
- 1/2 cup dark brown sugar
- 1 tbs dry ground mustard
- 1 tbs ancho chili powder
- 1.5 cup ketchup
- 1/4 cup vinegar
- 1 chipotle pepper in adobe sauce, chopped
- 1 tbs adobe sauce
- 2 tbs Worcestershire sauce
- 2 tbs soy sauce
Directions:
- Fry the bacon to render the fat.
- Add the fat that was rendered from the bacon to a sauce pan.
- Set the bacon aside after doing a rough chop on it.
- Saute the minced onions in the bacon fat over medium low heat until the onions are translucent. About 5 minutes.
- Add the garlic and saute until the garlic is soft. About 1-2 minutes.
- Add the dry spices till combined. About 1 minute.
- Add the remaining ingredients, including the chopped bacon.
- Simmer for 15-20 minutes until it is thick.
- Transfer to a blend and blend until it is very smooth.
- Let it cool and use it on anything and everything.
Other:
- The flavors improve as it sits. Letting it sit for 24 hours in the fridge is perfect.
- This is a perfect topping for bacon burgers.
