Add almost anything to a little ricotta and you have a good ravioli filling.
Add Italian sausage, spinach and a little parmesan, and you have the makings of a great sauce. Don't be afraid to push the red pepper and salt. Once added to a ravioli and sauced, the flavor level will be perfect.
Use this filling for your next ravioli night and you will not only enjoy it but will get more than your normal compliments.
Ingredients:
4 cloves garlic, smashed & minced
1/2 cup diced onion
1 lb Italian sausage
Nutmeg
Red pepper
Salt & pepper
10oz bag of fresh spinach
1 cup ricotta
1/2 cup parmesan
Directions:
In a pan, heat olive oil then add the onion & garlic. Add a little salt. Cook till tender.
Add the crumbled Italian Sausage, cook until meat has browned. Drain.
Season with nutmeg & red pepper flakes.
Add the spinach leaves 2 cups at a time, cover & wilt. Once all the spinach is wilted, transfer to a bowl and allow to cool.
Once cooled, add the ricotta & parmesan. Add salt, pepper & nutmeg to taste. Cool in fridge.
Add about 1 oz scoops per ravioli.
