When Jennifer & I were dating, we use to goto a strip-mall restaurant that served a Mexican Pizza appetizer. It was one of those dishes that is probably remembered better than it really was because of the company.
Either way, here is a recipe for Mexican Pizza that comes close to the memory.
Ingredients:
1 pound ground beef
2 tablespoons taco seasoning (1 package)
2/3 cup water
1 - 7 3/4 oz can Mexican style tomato sauce
1 - 14.5 oz can refried beans
10 small flour tortillas
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
1 tomatoes, seeded, diced
3 green onions, diced

Directions:
Preheat oven to 400 degrees.
Once the oven reaches 400, place the tortillas in the oven for 10 min to get crispy.
In a skillet over medium heat, brown ground beef. Strain to remove any pan drippings. Return to pan and add taco seasoning and water. Reduce heat and simmer 10 minutes.
Meanwhile, heat your refried beans until they are warmed through. Also, in a separate pot heat your tomato sauce until it is warmed through.
Once the meat is brown, the beans and tomato sauce are warmed and the tortillas are fried, you can start assembling your pizzas.
Starting with one crispy tortilla, spread refried beans, 1/4 cup of seasoned ground beef and sprinkle with cheese, then place another crispy tortilla on top. Spread refried beans on the tortilla, then spoon about 2 tablespoons of the Mexican tomato sauce on top, spreading it around with the back of your spoon. Sprinkle with cheddar and jack cheeses. Repeat until you’ve made five pizzas. Lay assembled pizzas on a cookie sheet, depending on the size of your cookie sheet you may need to do these in batches. Cook the pizzas for 5-10 minutes until the cheese has melted.
Before serving, add diced tomatoes and green onions on each pizza.
Notes:
If you want to spice things up you can use jalapeno's or chorizo re-fried beans.
