There are pasta sauces and then there are Pasta Sauces. What's the difference? The latter is the one you go back for seconds when your already full. This is the one that you not only lick your spoon when your done, but when no one is looking, you lick the bottom of the bowl.
The secret to this creamy tomato sauce is a unique tomato sauce called passata. Passata is a strained tomato sauce that right out of the jar has the perfect tomato taste that is not bitter but the best part of the tomato flavor. Add to this parmesan and ricotta and you have an addictive sauce that goes perfect your favorite pasta shape.
Ingredients:
2 tablespoons olive oil
1/4 cup red onion, diced
2-3 cloves garlic, minced
24.5 oz Passata (1 jar)
1-2 tbs sugar
5-6 basil leaves, torn or cut
3/4 cup ricotta cheese
1/4 cup Romano or Parmesan cheese, grated
Directions:
In a medium sauce pot, add the oil and red onion. Saute till onion is soft.
Add the garlic and cook for 30-60 seconds till it is fragrant.
Add the passata and bring to a simmer.
Taste to make sure the sauce tastes good and add the sugar a little at a time to taste.
Just before the pasta is ready, stir in the basil, ricotta & cheese. Once mixed leave on low heat till ready to serve.

Passata - The best I have found is Mutti Classic Tomato Puree Passata. I have found it at some stores but it is available on Amazon as well.
