Pico de Gallo became our families salsa of choice this year. The simple, fresh flavors balanced out the little bit of heat that is added. We used this as a chip dip as well as a condiment for taco's and other such Mexican foods.
Pico de gallo is a fresh, uncooked condiment who's main ingredients make up the colors of the Mexican flag, red from the tomato, white from the onion and green from the peppers.
Ingredients:
1 1/2 cup tomatoes, seeded and diced (about 5 roma tomatoes)
1/2 cup white onion, diced
1 large jalapeno, diced (leave the seeds and membrane in)
1 serrano pepper, diced
1 tbs garlic, minced
1/4 cup cilantro, chopped
1 lime
Salt & pepper
Directions:
Dice the tomatoes, onion & peppers and mix together gently. Add the minced garlic and most of the cilantro (reserve a little cilantro for garnish).
Add the juice of the lime, tasting after the first till you get enough tart taste.
Add salt and pepper to taste.
Let sit for about 30 minutes for the flavors to combine completely.
