Who doesn't like garlic rolls. Soft and chewy insides covered with garlic butter. Well, this adds a little "twist" to the typical roll by adding a layer of roasted garlic on the insides and twisting them into knots.
Ingredients:
2 Heads of garlic
Dough:
2 cups flour
1 tsp sugar
1 tsp salt
1/2 tsp dried rosemary
1 tbs olive oil
1 tsp yeast
2/3 cup warm water
Red pepper flakes
Mozzarella cheese (or gouda)
Glaze:
Butter
Salt
Pepper
Parsley
Directions:
Roast the garlic sealed in foil in a 400 degree oven for 40 min.
While the garlic is cooking combine all the dough ingredients and mix with a dough hook till combined and smooth, about 5 minutes.
Add to a lightly oiled bowl, cover and set near oven to allow the dough to rise while the garlic is cooking.
When the garlic is done, remove and allow to cool.
Roll dough out into rectangular shape
Add a little oil to garlic and mix into a paste. Spread on top of 1/2 the dough then lightly sprinkle with red pepper flakes. Add a nice coating of shredded cheese.
Fold the other 1/2 of the dough over then lightly roll with rolling pin to merge the 2 halves.
Cut into 1/2 - 3/4 in strips. Twist and stretch about 50% longer then tie into a knot.
Place on parchment paper and cook at 375 till just brown, about 10 minutes. They should still be doughy in the middle.
While they cook, melt butter, add salt and pepper & parsley.
Pull knots out and baste with butter mixture.
