What, may you ask, is Gooey Butter Cake. Originating from St. Louis, this sweet, indulgent dessert is put together in two distinct layers. Starting with a chewy base layer made from a yellow box cake mix, then topped with a luxurious cream cheese layer.
What makes Maw-Maw's Gooey Butter Cake unique is the crunchy layer of pecans sprinkled over the top.
As a side note, Maw-Maw credits this recipe to Teresa Dunn, but we know it as Maw-Maws. So do the guys at the Willmington Jiffy Lube.
Ingredients:
1 yellow cake mix box
3 eggs
2 sticks butter, softened
8oz cream cheese, softened
16 oz powdered sugar
1.5-2 cups pecans, chopped
Directions:
Preheat the oven to 350 degrees
Using a hand mixer, mix the cake mix, 1 egg & 1 stick of butter until the batter is smooth.
Spread mixture into a 9x12 baking dish
Next beat the cream cheese, 2 sticks of butter & powdered sugar until smooth.
Spread mixture over the batter
Spread the chopped pecans over the topping.
Bake for 35-45 min until the sides start pulling away from the dish.
