It's an odd day when we do not have meat on our dinner table. That said, think grilled cheese instead. The spinach & artichokes combined with a bunch of cheese makes you forget that for a moment.
These flavors combine very well and create a creamy, gooey sandwich that is like a grown up grilled cheese.
Ingredients:
1 cup sautéed spinach, lightly drain excess water (1 full bag of spinach or 1 box frozen)
1 cup marinated jarred artichokes, chopped
1 cup shredded gouda or fontina cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
2 clove garlic, finely diced
salt & pepper
1/4 cup fresh basil, chopped
red pepper flakes
3 large pieces of naan bread (can use pita or bread as well)
Cooking spray
honey, for serving
Directions:
Sauté the bag of spinach. Add 1 clove of diced garlic once the spinach is about 1/2 way done, then salt & pepper when it's done.
In a bowl, combine the spinach, artichokes, mozzarella, gouda, parmesan, basil, and a pinch each of red pepper flakes, salt, and pepper.
Microwave the naan bread for 20 seconds to make them a little more pliable. Layer the cheese mixture on 1 half of the naan, the fold in half and spray both sides with cooking spray.
Heat a large skillet over medium heat or use a panini press. Place the naan, one at a time, in the skillet and cook until golden on each side, about 3-4 minutes per side.
While the sandwiches are cooking, in a small bowl, add a tbs of water, 2 tbs of honey & 1 tsp red pepper.
When the sandwiches are done, lightly brush the honey mixture on one side of the naan.
