Mexican Rice (also known as Spanish Rice), is very simple to make and takes your Mexican dishes up a notch.
Ingredients:
- 3 tbs oil
- 1 cup long-grain rice
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1 tsp ground cumin
- 1/4 of a medium onion, finely chopped
- 1/4 cup tomato paste
- 2 cups beef broth
Directions:
- Heat the oil in a large saucepan over medium heat.
- Add rice, garlic powder, salt and cumin. Cook, stirring constantly until the rice is puffed and golden.
- Stir in the onions and cook until tender (2-3 minutes).
- Stir the tomato paste into the broth, then add the broth to the pan and bring to a boil.
- Reduce heat to low, cover and simmer for 20 minutes.
- Fluff rice with a fork and let sit for 5 minutes before serving.
