Chicken thighs are the best part of the chicken. Adding the right spices makes these the perfect chicken for a taco, enchilada, or any other Mexican dish.
Ingredients:
- 6 oz pineapple juice
- 2 tbs lime juice
- 1 tbs white vinegar
- 1 tbs olive oil
- 2 cloves garlic, crushed
- 1 tsp oregeno
- 1 tsp cumin
- 1 tsp salt
- 1 tsp ground pepper
- 1 tsp finely minced jalapeno, seeds included
- 1 tsp turmeric
- 2.5 lbs bonless, skinless chicken thighs (about 6 pieces)
Directions:
- Mix all the ingredients. Place the chicken in a zip-lock bag and pour the marinade over the chicken.
- Marinade 12-24 hours
- When ready, grill the chicken over medium heat for 10-12 minutes, turning once.
