Ingredients:
4 oz. semi sweet chocolate
2 C heavy cream, divided
½ C plus 1 Tbs. sugar, divided
3 eggs
2 tsp. instant coffee granules
1 tsp. vanilla, divided
1 packaged graham cracker crust (6oz.)
Directions:
Melt the chocolate. Combine 1 C heavy cream and ½ C sugar in a saucepan and cook until sugar melts, stirring constantly. Beat eggs. Stir ¼ C of cream mixture into eggs. Then stir back into cream mixture, stirring constantly 4-5 minutes until thick. Pour into large bowl. Beat in chocolate, coffee and vanilla on low - go to med. and beat 2 minutes. Pour into pie shell and cool 15 minutes. Cover and refrigerate at least 3 hours. Beat cream, sugar and vanilla to soft peaks and top pie.
